French Artichoke Description

While this sun-loving thistle variety is cultivated as a food, it also produces flowers and foliage that are a feast for the eyes! The emerging flower head consists of many small flower buds and bracts on an edible base. These fat buds bloom in late spring to early summer, reaching 3--6" across. At this point, they are no longer suitable for eating—but are delightful to look at. These large purple flowers are gorgeously set off by the plant's striking silvery, prickly foliage. The blooms attract honeybees and other pollinators, but hungry deer and rabbits are unlikely to eat them. French Artichoke is a perennial that reaches a towering 5–7' tall at maturity. When used ornamentally, it's great in back of a border and is a dramatic cut flower. Dead flowerheads can be left on the plants over the winter to provide visual interest.
